Hogs For The Cause Wrap Up 2022
My wrap up is extremely tardy this year. Perhaps it’s a sign of being three years older and the 48 hour marathon of Hogs was even more arduous with two years of rust to knock off. Or as an alternative, even though there was two years of rust we are now running twice as fast to keep up with the Tailgate Tigers & www.lacraftbutchers.com load of responsibilities.
At any rate it was great to shake off the rust at Hogs 2022 return to UNO and return to a mostly normal event. We streamlined our over the counter food offerings. Sadly we discontinued our fresh fried Cracklin’s this year. Due to run up in pricing and the labor required, we decided to make a change. Pulled Pork Sliders allowed us to use more of the non-turn in competition meat productively and make a great sale offering, so we made the change. We also sold a limited amount of ribs.
We added a musical guest for our Friday Night and Gary Brown (https://www.facebook.com/gary.brown.50309) made the night ROCK! Check out the video in the picture gallery.
Competition wise, we were a bit rusty but did well enough to remind us how close we are to serious breakthroughs in several categories. We continue to excel in the Shoulder/Butt competition, with a 4th place finish this year. Our Bacon turn in was top a top ten finish. Our Whole Hog placing moved up to a top 20 finish this year (We’re coming!). Of the 90 teams competing on the field we continue to hold our own or bettor our positions against some of the best restaurant and food & beverage groups in the area.
We continue to add quality team members on both our service group and cooking unit. Most of all we all enjoy each other’s company and work extremely well together. All wonderful people giving their time to a great cause.
