Crackllin A Thon Fundraiser Eplogue
It’s mid-summer. The Covid 19 Pandemic has kept us in Covid Confinement since Mardi Gras and caused many of our social events to be cancelled, including 2020 Hogs For The Cause in March. Tailgate Tigers has been pondering what to do with the 800 pounds of Pig Belly in our freezer meant for our Cracklin sales at Hogs this year… So what do you do?
You blow it out the week after 4th of July with a Cracklin A Thon Fundraiser! Relying on help from social media, email mailing list and lots of calls to our friends, Tailgate Tigers pulled off its biggest in house fundraiser. We sold 90 racks of Baby Back Ribs, 50 gallons of Jambalaya and 85 pounds of Cracklins. We were able to provide delivery of orders from Belle Chase to Lafayette. The team done good! We grosses over $6,500 in sales and should be adding to our Hogs contribution from earlier this spring.
Preparation for the Friday event started Monday and Tuesday with anticipated need provisioning. Order cut off was Wednesday. Orders kept coming in through the end of the day of the Friday July 10th event. This caused a need for continuous resupply. Every time a new order would come in after Wednesday, the krewe would shake their head no and I would say, “Sure, why not.” I think we cleaned out Zuppardo’s and the Rousse’s across from us of their whole stock of Baby Back Ribs on Friday after our initial order of four cases from Sam’s.
The cooking team did its usual excellent job of producing our unique flavors and maintaining our highest standards. The team members focused on breaking down the bulk food into packages and saucing ribs worked in perfect harmony with Vickie, Carrie and Adrian Stanley to organize the orders for the pick up or our delivery fleet. This was our first event staged completely at our 4141 California Ave, Kenner, LA base of operations and it was as perfect as perfection gets.

We are considering a fall event but will monitor Football season to see how to approach what we will plan.
